A study of the results obtained from all of the experiments in which beefsteak was ingested leads us to the conclusion that 200 grams of cooked steak, containing 8 to 10 grams of nitrogen, produce a rise in the heat output of from 8 to 12 calories per hour for 6 to 12 hours, and that the total effect upon the heat output is not complete in 12 hours. The period of maximum rise in metabolism probably occurs within the first 4 hours, although a considerable increase may be found for a much longer period.1
