With 201 grams of beefsteak only 24 grams of bread were eaten in the experiment on this date, corresponding to about 13 grams of carbohydrate. This amount probably had but little, if any, effect upon the carbon-dioxide production. The food contained 9.55 grams of nitrogen. The results of the experiment are given in table 209. Apparently the ingestion of the beefsteak and bread produced a marked effect upon the metabolism of the subject, as the increase continued throughout the 5-hour experiment, although the nitrogen excretion per hour was not so great as in the experiment on January 12. (See table 208.) It is unfortunate that a basal value for this experiment could not have been determined on the same day, for the total increments computed from the basal values and the values measured after the ingestion of the food are much larger than in the two preceding experiments with the same subject and with essentially the same protein intake. The chief value of the results of this experiment lies in the fact that they show the highest effect to be found in the first few hours after the ingestion of food.
