Beef A La Mode

8 lb. round beef.

4 carrots.

2 turnips.

1 onion.

1 piece of celery.

1 cup vinegar.

2 tablespoons or 2 raw tomatoes.

1 pod garlic. 1 teaspoon salt. 1 cup of claret.

1 pod pepper.

2 table spoons browned flour. 1 teasuoon minced oarslev.

Lard and salt beef and pour the vinegar over it, cut-up the vegetables and put on the beef, and let stand a few hours, then pour off the vinegar and put the beef in a deep pot; fry on both sides quickly until brown then add flour, 1 qt. water and vegetables. Let this cook 20 minutes to each pound of beef. 1 cup of claret can be added, if desired. If necessary a little more water may be added.

Fillet Of Beef

6 lbs. tenderloin beef. 1 pt. mushrooms.

1 1/2 doz. sliced truffles.

2 lemons.

1 carrot, sliced.

2 tablespoons olive oil. 1 coffeespoon cayenne pepper.

1/2 teaspoon chopped onion. 1 tablespoon browned flour. 3 cups stock. 1/2 wine glass sherry.

1 teaspoon salt.

2 tablespoons butter.

Lard, salt and pepper beef, rub with oil and pour over it the juice of 1 lemon, carrot, lemon and onion and let it stand on the beef several hours, then take fillet out and put in pan with stock and 1 teaspoon flour. Bake 1 1/4 hours; serve with sauce.

Sauce

Heat 2 tablespoons butter, stir in 2 cups stock, and 3 teaspoons browned flour, cook about 15 minutes, and then add mushrooms, sliced truffles and 1/2 wine glass sherry.

Roast Beef

8 lbs. beef ribs.

1 tablespoon olive oil.

1/4 teaspoon minced onion.

1 pt. beef stock.

1 tablespoon browned flour.

Salt, pepper, flour and oil roast. Put this on the upper shelf of a very hot oven for about 15 minutes or until brown on both sides, then put on lower shelf and add onion and stock. Baste frequently. Cook 10 minutes to each pound of beef.

Roast Capons With Truffles

2 capons.

2 doz. sliced truffles.

2 tablespoons butter.

1 teaspoon salt.

1/2 teaspoon cayenne pepper.

1/4 lb. pork fat.

Lard, salt and pepper capons; fry truffles in butter; stuff capons with truffles and let stand 24 hours before roasting.

Chicken Pie

3 spring chickens.

1 piece celery.

1/4 teaspoon red pepper. 1/4 lb. pickled pork.

2 tablespoons flour.

1 cup milk or cream. 1/2 cup butter. 1/2 teaspoon grated onion. 1 teaspoon minced parsley.

Unjoint the chicken the same as to fry, and put it on to boil in 1 1/2 pints of water with pickled pork, pepper, onion and celery; when tender stir in flour, butter and cream, then add parsley and put it into pastry partially cooked and bake 10 minutes.

Roasted Goose With Apple Dressing

1 goose.

1 doz. apples.

1 tablespoon browned flour.

1 cup sugar.

1 tablespoon olive oil.

Rub goose with salt, pepper, oil and flour. Boil apples, mash, add sugar and stuff goose. Roast, allowing 20 minutes to the pound. Baste frequently.
