Yields 4-6 servings Ingredients: Salad: 2 cups assorted lettuce, chopped or torn 4 tomatoes, wedged or sliced 1 cucumber, seeded and sliced 1 bell pepper, seeded and sliced 1 small onion, sliced ½ cup pitted black olives (preferably brine-cured), coarsely chopped 3/5 cup crumbled feta cheese Dressing: 6 Tbsp olive oil 1 tsp red wine vinegar ½ tsp fresh chopped garlic ½ tsp oregano ½ tsp dill weed ¼ cup parsley, chopped Salt and freshly ground black pepper 2 Tbsp fresh lemon juice Directions:
