A yellow coloring matter, obtained from the stigma, or flower centre, of a species of crocus. It is costly on account of the labor of picking the small stigmas. It has a pleasant perfume, and is used to color and flavor confectionary, cheese, and butter. Saffron tea is sometimes given to canary birds when shedding their feathers.
