Whites of 3 eggs. 1 teaspoon vanilla.
1 lb. sugar.
Moisten the sugar with a little water and then stir in the whites of eggs beaten to a froth. Cook in a double boiler about 1/2 hour, then add the vanilla. Pour on platter and whip until thick.
3/4 lb. sweet chocolate. 1/2 cup cream. 1/2 cup milk.
1 teaspoon butter. 1 1/2 cups sugar.
Heat the milk, butter and cream, and dissolve the chocolate in it, then put in the sugar and cook until it turns hard when dropped in water.
1 lb. sugar. 1 lb. flour.
1 lb. butter.
10 eggs beaten separately.
2 lbs. citron.
2 lbs. chopped pelled almonds. 1 grated cocoanut. 1 glass brandy.
1 grated nutmeg.
2 teaspoons yeast powder.
Cream butter and sugar, add yolks of eggs, flour and whites of eggs alternately, stir in cocoanut, brandy and yeast powder, then the citron and almonds dusted with a little flour; beat well and thoroughly. Bake slowly.
6 eggs beaten separately.
3 cups sugar.
6 cups flour.
1 tablespoon whiskey.
1 1/2 cups milk.
3 teaspoons yeast powder.
1 1/2 cups butter.
Mix well the above together, bake in muffin rings.
1 doz. eggs beaten separately.
1 lb. citron sliced thin.
1 lb. blanched and minced almonds.
1 teaspoon ground cloves.
1 teaspoon cinnamon.
1 teaspoon allspice.
1/2 large glass brandy.
1 lb. sugar.
1 lb. browned flour.
1 1/4 lbs. butter.
3 lbs. seeded raisins.
2 lbs. currants.
2 grated nutmegs. 1 wine glass sherry.
Cream butter and sugar, add the eggs beaten separately, then add flour, spices and fruits, and beat until light. After all the above has been mixed add the wine and brandy and bake about 4 hours.

1 1/4 lbs. sugar.
1 lb. butter.
1 lb. seeded raisins.
1 lb. currants.
1/2 lb. citron cut in small pieces.
1 lb. almonds (cut fine). 10 eggs, beaten separately.
1 grated nutmeg.
2 wine glasses brandy. 1 small glass rose water.
Cream butter and sugar, stir in eggs, flour and nutmeg, add fruits and almonds dusted with flour, then rose water and brandy. Bake about 4 hours.
1 1/2 lbs. blanched and minced almonds.
1 lb. shelled and minced pecans.
1 1/8 lbs. butter.
1 1/8 lbs. flour.
1 1/4 lbs. sugar.
1 doz. eggs, beaten separately.
1 1/2 lbs. grated sweet chocolate.
3 lbs. seeded raisins.
1/2 lb. minced dry figs.
1 wine glass rose water.
2 lbs. currants. 1/2 lb. citron, cut fine. 2 grated nutmegs. 1 tablespoon cinnamon. 1 tablespoon cloves. 1 tablespoon allspice. 1/2 tea cup molasses. 1/2 large glass brandy.
Make the same as black cake.
