Required : Half a calf's head.

One carrot, one onion, and a stick of celery. Salt and water. Parsley sauce. One gili of vinegar.

Wash the head carefully, taking out the brains, eyes, and all splinters of bone, and lay it in salt and water for two hours. Next put it into a stewpan with the vegetables, one gill of vinegar, a teaspoonful of salt, and cold water to cover it. Bring the water to the boil ; skim it well, and let it simmer gently for two hours. Meanwhile cook the brains and tongue separately.

Put the head on a hot dish, garnish it with cut lemon, the brains, and the tongue, and serve it with parsley sauce.
